This is a known issue when Phoenix is installed:

https://issues.apache.org/jira/browse/NIFI-1712

https://github.com/apache/nifi/pull/1156

Only work around currently is to copy phoenix-client.jar to the appropriate nifi/work/nar directory to get it on the HBase processor's classpath.

Tim, which HBase version are you trying to connect to?

To clarify because it's confusing otherwise: despite the missing class being named "org.apache.hadoop.hbase.ipc.controller.ServerRpcControllerFactory", this is an Apache Phoenix class. It has to be in the "org.apache.hbase..." package to access protected API.
