How to change OS user under which NFS gateway is launched by ambari server?

Currently ambari server launches NFS gateway under "root" os user, and GW is not working.

If I manually launch NFS GW under "hdfs" it works. Regarding to documentation NFS gateway must be launched under the same user as HDFS working.

How to change OS user form "root" to "hdfs" that ambari server to launches nfs gw?

Step 1 of the docs here talks about what configurations to add/change for the user running the NFS Gateway. Hopefully you are using an HDP version of 2.5 or greater as there was a bug in previous versions around this, but it is resolved now and the docs are updated.
