How to install R on each CDH 5 node during launch (using AWS Quick Launch)

During the AWS Quick Start for the Cloudera EDH 5, where can I change the Amazon Machine Image specification that enables it download R upon launch? In other words, I want to change the AMI so that R is installed directly upon launch.

There is no such AMI matained by Cloudera. You can install R using a custom bootstrap script that Director runs or build your own AMI with those bits pre-installed.
