Hi all,
tried to use the new parameter thing on PutEmail processor in 1.10.0.
Checked spelling and value a thousand times.
Doing the same thing with variables works fine.
Any help is appreciated!

It means that there are issues and its not recommended to use it without realizing you may encounter inconsistencies. I read up on this and it appears to only be an issue with some proccessors. I would expect to see a 1.10.1 coming very soon to address the major bugs.

I believe this is a bug in 1.10. Which has an active Jira to be fixed in next version.
1.10 is not ready for “production”...

For the sake of completeness and to confirm your suspicions:
With NiFi 1.11.1 parameters also work in the PutEmail-Processor.
