You can go to ambari UI, hosts, select a host with clients installed, Host Actions and click on download client configs. This will get you all the configuration files. You can also get those by exporting ambari blueprint but they are in json format, not individual xmls.

I haven't run into any 'cons' of using YARN ACLs. ACLs will help you as more users/groups of users end up using the cluster. If you are using hiveserver2 with doAs as 'false', then all your jobs are running as user hive. In that situation, you have be careful on which queues the jobs are submitted to since YARN ACLs will not help you there.

hbase.rootdir in ambari-metrics through ambari UI has the local hbase base directory where metrics are stored. This by default is file:///var/lib/ambari-metrics-collector/hbase

Yes. Get ODBC driver from http://hortonworks.com/downloads. You have ODBC driver for multiple OS targets. Once you get the driver, you can follow documentation from http://hortonworks.com/wp-content/uploads/2016/04/Hortonworks-Hive-ODBC-Driver-User-Guide.pdf to setup ODBC driver. Once you set ODBC driver, you can connect to this from SAS like any other ODBC driver.

By default, sqoop will directly import nvarchar to string (if you let sqoop create hive tables). If you create a HCatalog table stored as ORC in advance, you can directly right to Hive as ORC and gain performance and compression. So, I suggest you try put directly into Hive.
