No, it's not. CDH 5.7 is supported on the following RHEL versions:

5.7
5.10
6.4
6.5
6.6
6.7
7.1
7.2

I'm assuming next version of CDH would have support for RedHat 6.8.

Do I see correctly that also the newer version of CDH (5.8.1) does not yet support CentOS 6.8 ?

What would be the risks if we tried to install it anyway ?

It may/may not work; and regardless, that config is not currently supported.
