Looks like there are a couple of good youtube tutorials for setting up HDP on AWS along with the blog which @Neeraj Sabharwal mentioned :-

The challenge I have is I can spin up instances within a VPC, The instances have no connectivity to internet. I am trying to located a document which lists the process to accomplish this.
